Warming Winter Chai Tea Oatmeal

Infused with the flavorful spices of chai tea, this fast and easy breakfast will warm you up for sure on a cold winter morning. Prepared in an insulated travel mug, it can be ready when you are to “walk out the door with you” for a warm breakfast on the go.

Makes 1 serving

1 cup brewed chai tea
½ cup regular rolled oats or GF rolled oats
Pinch of salt
¼ of a medium apple, chopped into small chunks, optional

In a small pot, over high heat, bring brewed tea to a boil. Stir in oats, salt and apples if using. Immediately remove from heat. Cover and let sit for 15 to 20 minutes. For a creamier texture, reduce the heat to low, cover and cook 2 to 3 minutes, stirring occasionally. Serve as desired with your choice of sweeteners, such as sucanat or honey, and a little splash of milk. Top with other fresh fruit or nuts for a really hearty “stick to your ribs” breakfast.

This recipe can easily be made for more servings – the ratio for liquid to oats is always 2:1 – twice the liquid as oats – example 2 cups of liquid to 1 cup of oats.

A combination of any liquid, tea, water, milk can be used together or alone.

Tips

While traveling this summer, I discovered making oatmeal in my room while I dressed using a travel mug and the hotel coffee maker to heat the water. It was an easy healthy travel meal.

To prepare in a travel mug: Place oats, salt and apples in mug. Pour the boiling chai tea over the oats and give a quick stir. Place the lid on the mug. Let sit for 15 to 20 minutes. Top with sweetener, milk or other toppings as desired.

To brew the tea:

Measure 2 tsp of loose tea into a teapot or cup. Pour boiling water over the top. Cover and let steep 10 to 15 minutes. Tea can be made ahead and reheated when ready to use.
