Recently, science has confirmed what we have been saying for a decade: Adding vitamin D to milk is a risky business.  It is entirely unnecessary to "fortify" milk with this highly toxic substance.

The New England Journal of Medicine reported eight cases of vitamin D intoxication resulting from excessive fortification of commercial milk.  Symptoms include anorexia, weight loss, constipation, weakness, fatigue, inability to think correctly, and something they describe as "failure to thrive."  You wouldn't catch all that stuff from my Great-Grandma Bell's milk!

Children are denied whole milk because pediatricians are obsessed with the cholesterol myth.  These same gutless wonders don't say anything about children drinking half-a-dozen bottles of Coca-Cola a day, starting before breakfast!  But kids can't get a decent glass of milk.

Even if Mom buys whole milk, thinking it is better for her growing child than that sickly blue stuff called skim, she can't win, because all of the commercial milk is homogenized.  I'm convinced that homogenization is even more detrimental to the nutritional quality of milk than the heat processing called pasteurization.

Writing The Milk Book was the most fun I have ever had with a typewriter.  I am even more pleased with this book now, because it has endured the test of time.  I hope you will agree - and will urge your own children to read it, too.

Dr. William Campbell Douglass is a fourth generation physician whose family has practiced medicine in the southern United States since 1850.  His son, "Camp" Douglass IV, is currently an emergency room physician in Florida.

Dr. Douglass is a graduate of the University of Rochester; the University of Miami School of Medicine; and the United States Naval School of Aviation and Space Medicine.  He has taken post graduate courses at Oxford, Princeton, Harvard, and the Universities of California, Florida, and Pennsylvania.

A founding member and state president of the Florida American College of Emergency Physicians, Dr. Douglass has received numerous honors and awards, including twice being selected as "Doctor of the Year" by the National Health Federation.  This "new medical heretic" has written numerous books and articles and publishes a monthly "contrary opinion" medical letter called Second Opinion.

THE AUTHOR

SHELLEY MELVIN is a native of Pennsylvania and a graduate of West Virginia University. She has lived in London and in France, where she studied with the late Simone Beck, Julia Child's co-author of Mastering the Art of French Cooking.

Melvin's career has included catering, teaching, creating a line of gourmet chocolates, and working as a consumer advisor for a food processor manufacturer.

Her love of food and cooking has meant a constant battle with the scales. She has for many years been a receptionist at Weight Watcher meetings and enjoys helping others who have similar problems.

RECIPES from Not Just Cheesecake

LEMON CHEESECAKE - Rich and delicious!
From NOT JUST CHEESECAKE

  • 2 cups nonfat yogurt cheese 
  • 7 tablespoons sugar (or to taste)  
  • 1 tablespoon cornstarch
  • 4 egg whites, lightly beaten (or 1 egg and 2 whites)
  • 1 lemon, juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon grated lemon peel, or 1/4 teaspoon lemon extract

Preheat oven to 325 degrees. Lightly grease a 7-inch springform or 8-inch piepan.

Combine yogurt cheese, sugar, cornstarch, lemon juice and vanilla, mixing gently with a fork or wire whisk until well bended. Stir in the eggs.

Pour into prepared pan and smooth the top with a spatula. Bake until the center is set, 20 to 25 minutes (piepan) or 55 minutes (springform). Cool slightly and refrigerate, uncovered, for 24 hours. Serves 8. 

1 slice: Calories 100, Protein 6 gm, Carbohydrates 18 gm, Fat less than 1 gm, Cholesterol 0, Calcium 143 mg, Sodium 65 mg.

SPINACH DIP
From NOT JUST CHEESECAKE

  • 1 package (10 oz) frozen chopped spinach, thawed 
  • 1 1/2 cups nonfat yogurt cheese
  • 1/2 cup chopped green onions
  • 1/2 cup chopped parsley 
  • 1 teaspoon seasoned salt (optional)  
  • 1/4 teaspoon dried dill weed
  • 1/4 teaspoon Tabasco sauce
  • Drain spinach, then squeeze out as much liquid as possible. Chop finely. Combine with remaining ingredients and mix well. Cover and chill.
  • Makes about 2 1/2 cups. 

1/4 cup: Calories 35, Protein 4 gm, Carbohydrates 5 grams, Fat less than 1 gram, Cholesterol 0, Calcium 138 mg, Sodium 51 mg.
