This page is dedicated to answering the Frequently Asked Questions (FAQ's) that we get on anything related to bread making and equipment, or the Bread Beckers in general. We will NOT include your name or e-mail address if your topic gets posted on this page. Thanks. Q: On the Electrolux Assistent, is the roller supposed to turn all the time? Mine only turns when I have added about two cups of flour. A: If you leave the roller against the bowl while mixing the liquids, the bowl turns the roller. As you begin to put the flour in, you need to adjust the roller about an inch or two away from the side and lock it down. As you add the flour and the dough becomes stiffer, the dough itself will turn the roller. Q: How long will grains last in storage? A: Wheat and other grains will store almost indefinitely if they are properly processed (cleaned, with the moisture reduced to the proper level), then stored in a proper container (in the Bible, Joseph stored grain for 7 years, then used it for 7 years). The grain must be properly cleaned to remove chaff, rocks, metal particles (from the processing machinery), and the weed seeds. Long term storage containers for home use must keep moisture, bugs, and mice out of the grain. Most people buy their grains in 5 or 6 gallon plastic buckets that have been nitrogen (or CO2) flushed. The bucket will keep moisture, bugs and mice out of the product as long as the lid is kept sealed tightly. The nitrogen or CO2 gas flushing of the bucket kills (by suffocation - typically takes 2-3 days) any bugs that may have gotten into the grain from the time it was harvested. When the bucket is opened at home, the gas has done its job; so, it doesn't matter that fresh air gets in. What does matter is that the bucket lid is re-sealed tightly to keep new bugs from getting in. The standard lids that come on most buckets have a gasket, and can be re-sealed many times - but, it can be a hassle. That's why we sell so many Gamma Seal Lids - once you put it on a bucket, it is sooooo easy to get in an out! Ladies never break a nail using the Gamma Lid! Q: If I freeze my freshly ground whole wheat flour, will I lose the vitamins? A: Yes; freezing will SLOW the oxidation process, but it will not stop it. All other things considered (your time to make bread, freezer space, etc.), it is better to bake all your bread products (locking in the nutritional value), then freeze them. Q: My wheat was packaged in plastic buckets, with DIATOMACEOUS EARTH to protect it from bugs. Is it okay to run this through my Whisper Mill? A: Yes. We called Creative Technologies (the manufacturer of the Whisper Mill), and they said it is not a problem to run wheat that has been treated with diatomaceous earth through the Whisper Mill. Q: What kinds of grains, beans, etc. can I mill in the GrainMaster Whisper Mill? A: Click HERE to see the list of grains that are okay (AND those that are not!) in the Owner's Manual. Q: When making a large batch of dough, what should we do to keep the remainder of the dough from going into the second rise, while we are working with part of the dough? I was making a double batch of cinnamon rolls the other day, and placed part of the dough in the refrigerator, thinking that it wouldn't rise so quickly. But,---IT DID! - TC A: There is really no way of keeping it from rising. There is also nothing wrong with letting it rise a second time. In fact, I have let my bread rise four times before. The yeast lets off more nutrients the more times you let it rise. You just have to be careful not to let it rise too many times or it will ferment. I usually let my bread rise three times, the last time being in the loaf pan. - Ashley Q: What's the difference between red, white, and soft wheat?
