{"id":17968,"date":"2019-02-22T16:57:00","date_gmt":"2019-02-22T21:57:00","guid":{"rendered":"https:\/\/www.breadbeckers.com\/blog\/?p=17968"},"modified":"2019-02-22T16:57:00","modified_gmt":"2019-02-22T21:57:00","slug":"cuban-black-beans-and-barley","status":"publish","type":"post","link":"https:\/\/www.breadbeckers.com\/blog\/cuban-black-beans-and-barley\/","title":{"rendered":"Cuban Black Beans and Barley"},"content":{"rendered":"<p><!--more--><\/p>\n<ul>\n<li>1 cup dried black beans<\/li>\n<li>3 TBS olive oil<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 cup barley<\/li>\n<li>2 cups water<\/li>\n<li>1 tsp. ground cumin<\/li>\n<li>\u00bc cayenne pepper<\/li>\n<li>1 tsp. salt<\/li>\n<li>\u00bc black pepper<\/li>\n<li>Optional: Use 1 Tbsp Jack and the Bean dip instead of cumin and cayenne<\/li>\n<\/ul>\n<p>Soak beans either over night or using the quick soak method below.<\/p>\n<p><strong>Quick soak method:<\/strong><\/p>\n<p>For each cup of beans, place 4 cups of water and 1 tsp. salt into the pressure cooker.\u00a0 Add the beans and bring to a boil.\u00a0 Lock the lid in place and bring pressure to second ring over high heat.\u00a0 Reduce heat to maintain pressure at the second ring and cook 2 minutes.\u00a0 Release pressure with the cold water method and remove the lid.\u00a0 Drain beans and cook as directed in the recipe.<\/p>\n<p>In 4 quart or larger pressure cooker, heat oil over medium high heat.\u00a0 Add onion and garlic.\u00a0 Cook until onion softens.\u00a0 Add barley, stirring often until lightly golden.<\/p>\n<p>Add water and soaked beans.\u00a0 Stir in cumin, cayenne, salt and pepper.<\/p>\n<p>Close lid and bring pressure to first ring over high heat.\u00a0 Adjust heat to stabilize pressure at first ring.\u00a0 Cook for 18-20 minutes.\u00a0 Remove from heat and use Natural Release Method.<\/p>\n<p>Makes 4-6 servings<\/p>\n<p>Great for lunch as is or rolling up in a tortilla with salsa, cheese and or sour cream!\u00a0 Also great to add boneless chicken and let it cook right along with the beans and rice.<\/p>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":2,"featured_media":18117,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[28,3],"tags":[],"class_list":["post-17968","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-grains","category-recipes"],"_links":{"self":[{"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/posts\/17968","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/comments?post=17968"}],"version-history":[{"count":0,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/posts\/17968\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/media\/18117"}],"wp:attachment":[{"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/media?parent=17968"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/categories?post=17968"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.breadbeckers.com\/blog\/wp-json\/wp\/v2\/tags?post=17968"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
