HEALTHY GRAHAM CRACKERS

½ cup evaporated milk *

2 tsp. Vanilla

2 tablespoons lemon juice

2 eggs, beaten lightly

1 cup sucanat

1 tsp. Real Salt

½ cup honey

l tsp. Baking Soda

1 cup extra light olive oil

6 cups fresh milled white flour

Mix together milk and lemon juice; let stand. Beat well in a large bowl the sucanat, honey, oil, vanilla, and eggs. Sift or stir salt and soda into flour mixture. Add flour mixture and milk mixture together and mix well. Add additional flour as needed to make a stiff dough.

Divide dough in 4 equal parts and place each on a greased and floured cookie sheet. Roll each to about 1/8 inch thickness. Prick every 1 or 2 inches with fork tines. Bake at 375 degrees for 15 minutes or until light brown. Cut into squares immediately. * Or ¼ cup nonfat milk powdered plus ½ cup water.  Theresa Cussimanio - Marietta, GA
