September is Whole Grains Month

What makes grains great? From cereals, granola, brown rice and pasta to breads, muffins, pancakes and more, real whole grains nourish us with fiber, vitamins, minerals, complex carbohydrates, essential fatty acids and protein. Grains, you might say, are a nearly perfect food. We invite you to celebrate the greatness of grains with us throughout the month of September.  Each week we will spotlight a different grain and share a few recipes to try. We will offer special sales and discounts on the featured grain and some of our favorite tools used in the recipes.

GRAIN OF THE WEEK – Sept 5 – 11, 2016

OATS

Historically oats have been regarded as a medicinal food, used as a healing agent, moisturizer for skin, and a good cough reliever. Until the 19th century, oats were used primarily for animal feed, with only the people of Scotland and Ireland enjoying oats as food. Today oats are a popular “people food” for their great taste, versatility and outstanding nutritional value.

Oats are particularly high in the amino acid, glutamine, which has been shown to promote healing in the gastrointestinal tract and to boost immune function. Oats provide important healthy fats as well as lecithin which can help balance cholesterol levels. Like barley, oats provide the very unique beta-glucan fiber. Beta-glucans seem to slow digestion, and give a feeling of fullness, perhaps contributing to oats’ “stick to your ribs” reputation.

Oats are generally thought to be gluten free but to avoid contamination with gluten containing grains, those with sensitivities should look for oats that are processed in a dedicated gluten-free facility.

Unique among the most common commercially processed grains, oats rarely have the bran and germ removed, making them a readily available whole-grain option. Oats are sold as groats, steel-cut oats, rolled oats and quick cooking oats. All oats for human consumption, even groats, go through a steam stabilization process to prevent rapid spoilage, once the hull is removed. Oats, however, unlike most other grains are still not suitable for long term storage. In an airtight container, stored in a cool place, oats have a shelf life of about 1 year. Packaging smaller quantities in a vacuum-sealed container that can be used more quickly after opening is more suitable for long term storage.

Recipe

Oatmeal is a perfect warm and comforting breakfast (or anytime) cereal. It is versatile and so easy to make.

Rolled oats do not necessarily need to be cooked. You can simply heat the liquids and pour over the rolled oats, cover and let sit about 15 minutes. A thermos container or insulated coffee mug works very well. But for the creamiest textured oatmeal using part milk/part water, simmer covered on a low heat for 10-15 minutes or longer. A simmer mat is the perfect tool to prevent scorching. And if you have an Ankarsrum Assistent, the Flake Mill attachment will quickly and easily turn your oat groats into freshly rolled oats. The taste is beyond compare.

Basic Creamy Oatmeal

-¾ cups rolled oats (or ½ cups oat groats rolled using the Ankarsrum Flake – Mill to make ¾ cup rolled oats)
– 2 cups water (or 1 cup water plus 1 cup of milk)
– 2 Tablespoons sucanat or honey granules or other natural sweetener
– ½ teaspoon cinnamon
– Dash of pure vanilla extract
– Pinch of salt

Heat water and milk. Stir in oats, sweetener of choice, cinnamon, vanilla and salt. Simmer on very low heat 10-15 minutes.

Delicious additions:

Cranberry Almond Oatmeal – add ¼ cup dried cranberries and ¼ cup sliced almond with other ingredients. A dash of almond extract may be added as well.

Banana Walnut Oatmeal – add 1 medium banana, sliced and ¼ cup chopped walnuts with
other ingredients.

Chai Tea Oatmeal – substitute 1 cup of brewed and strained chai tea for the water called for in the recipe.
