Pumpkin Muffins

 

3 ½ cups of freshly milled flour
2 tsp. Baking Soda
½ tsp. Baking Powder
1 ½ tsp. Salt
2 tsp. Pumpkin Pie Spice
3 Eggs
3 ½ cups of Sucanat w/ Honey
¾ cups Extra Light Olive Oil
2 cups Mashed Pumpkin

(**NOTE** Like some banana bread recipes, the amount of sweetener is close to if not the same as the amount flour.  If you would rather use honey in this recipe, cut the amount in half.)

Mix together dry ingredients.  In a separate bowl, whisk together eggs, Sucanat w/ honey, oil, and pumpkin.  Add egg mixture to dry ingredients.  Pour into greased muffin tin.  Bake at 350˚ for 15-20 minutes.
